Fudge Recipe
Mar. 11th, 2008 11:42 pmI brought fudge to a party a week ago, and have received requests for the recipe. As I have gone through the work of typing it in, I will now share it.
This recipe is labled as from my Aunt Cathy.
1 jar marshmallow creme (5-10oz) (I used a 7oz jar.)
1 1/2 cups sugar
2/3 cup evaporated milk (small can)
1 cup butter
1/4 tsp. salt (I forgot to add this in the last batch)
2 cups chocolate chips (I used a mix of semi-sweet and milk chocolate)
1/2 cup chopped nuts (I used large walnut pieces.)
1 tsp vanilla
In 2 quart saucepan, stir marshmallow creme, sugar, milk, butter, and salt. Bring to a full boil, stirring constantly, over moderate heat. Boil 5 minutes, stirring constantly. [1] Remove from heat. Add chocolate chips and vanilla. Stir until smooth.[2] Add nuts. Pour into buttered pan. (Thick: 9 inch square pan, thin: 9x12) Chill.
[1] Stirring while it's boiling is very important. It will start to brown a little. You want it to brown but not burn. That makes it smooth.
[2] In this batch the baby woke up during this step. I had to leave it for too long and the chocolate chips wouldn't melt all the way. I put it back on the heat for a bit but didn't want to burn the chocolate and eventually gave up, leaving lumps of pure chocolate in the fudge. I think the lumps tasted good.
